I personally like to keep a well stocked spice cabinet of a wide range so I can throw together whatever on the fly

cross-posted from: https://piefed.jeena.net/c/cooking/p/283949/silesian-dumplings

I'm born in Silesia which now is part of Poland but before WWII was German.

Anyway, we make some specific potato dumplings there. I moved from there in 1989, and I probably had them since there somewhere. But today was the first time I made them myself.

Here is a simple recipe if you're interested: https://polishfeast.com/polish-silesian-dumplings/

I am going to treat myself to some charcuterie soon, probably ordering from Caputo’s. Would love your recommendations for your favorite meats and cheeses.

I just knocked mine to the floor from the cabinet, and all the clear plastic bits broke.

Taco night (leminal.space)

Got some arrachera and made a quick guacamole

I put onion, jalapeño, tomato and lemon with some salt and pepper and let it sit for a little so the lemon soaks into the onion along with jalapeño

Then I added avocados

I cooked up the meat on a pan, I don't own a grill currently

I keep the meat in a cast iron dutch oven and use my electric griddle to cook the tortillas.

Once everything is cooked I grab one tortilla at a time and use some scissors to cut some meat for the taco. Then I add the guacamole and some store bought salsa from the deli

No idea where I will be able to find these mushrooms. An Asian grocery, although that was loads easier when I lived in Providence.

Tomato sauce Recipes?? (sh.itjust.works)

Okay, maybe a silly question, but I am looking for recipes for tomato sauce. Not pasta sauce, not spaghetti sauce, but the stuff that comes in the little 8oz cans that's basically just tomatoes and salt! We use a ton of it in different recipes and I'd love to be able to make my own, but when I try to look it up I only get recipes for pasta sauce!!

I'm sure it's not that hard, but I know the texture has to be just right (to a certain extent) for it to work in other recipes. Has anyone made their own tomato sauce/have any tried and true recipes? Please share your wisdom 🙏

Edit: This stuff below, different from tomato paste, but very similar!

I used green lentils instead of red, because that's what I felt like.

@allthingsfoodandcooking My homemade fermented chilli sauce is causing my throat to feel sore
Like it feels like having a throat irritated by havinf an infection. It doesn't happen when i eat other, even spicier (carolina reaper) sauces from the store. Is it too acidic?
